Steak with Easy Chimichurri

Ingredients (Chimichurri)

  • 3/4 cup vinegar
  • 1/2 cup olive oil
  • 3/4 cup chopped parsley
  • 3 tbsp dried oregano
  • 6 cloves garlic, chopped
  • 1/2 tsp red pepper flakes
  • 3/4 tsp salt

Instructions

  1. Season the steaks deliberately with salt and pepper on all sides and preheat your oven to 200° F
  2. Heat a cast iron skillet until piping hot and add a drop of oil.
  3. Add the steak and sear it on all sides for 30 seconds, you want a nice crust on them.
  4. Add the garlic and thyme to the pan and create a bed for the steak to sit on.
  5. Get the pan with your steak into the oven until the internal temperature of the meat reaches 130° F for medium rare.
  6. Let the steaks rest for 5 minutes before slicing against the grain!
  7. Mix all ingredients for the Chimichurri in a bowl and adjust seasoning to taste.
  8. Enjoy immediately!
